THE STORY

Materia Prima is the culmination of four years of evolution from chef Victor Garvey, the creative force behind SOLA, Europe’s first Californian restaurant to earn a Michelin star.
Where SOLA became known for its precision and luxury, Materia Prima embraces the opposite — intimacy, simplicity, and purity.

As Victor describes it:

“It’s my own little world that I’d like to personally invite people into, one service at a time.”

THE EXPERIENCE

Designed for only 16 guests, Materia Prima offers an atmosphere that is both personal and immersive.
At the heart of the concept is respect for the ingredient — dishes that appear deceptively simple yet celebrate the finest seasonal produce at its peak.

Each dinner service is underscored by a live DJ, creating an energy that blurs the line between fine dining and art performance. Every detail of the interior has been hand-crafted by a master carpenter using exceptional materials, reflecting the same care and precision found on the plate.

CUISINE

Drawing deeply from Victor’s years in Japan, the menu channels restraint, balance and purity of flavour.

SIGNATURE DISHES

Line-caught Atlantic bonito cured in chorizo fat, grilled over binchotan charcoal, served with roasted onion vinegar jelly, mikan and beni-tade.

Chawanmushi of bouchot mussels with finger-lime, coriander root and green curry.

Gyoza of langoustine, duck liver and preserved fig with black truffle and aged black rice vinegar.

Duck wing stuffed with wind-dried sausage, black-trumpet mushrooms and koji rice, glazed in ume-plum tare.

Vacherin of blackcurrant and long pepper — a delicate finale with a hidden surprise.

MENU & PAIRINGS

For lunch, choose between the Reduced Menu at £99 or the Standard Tasting Menu at £169, while dinner offers the Standard Tasting Menu at £169 and the Carte Blanche at £214. Wine pairings are available at £125 for the Reduced Menu and £160 for Carte Blanche, with non-alcoholic pairings at £65 and £85 respectively.

Our wine list features a wide range of wines showcasing small producers from Spain, France, and the U.S., alongside an exceptional selection of champagnes. Expect table-side moments, inventive creations, and a relaxed, indulgent atmosphere — no dress code, no turn times, just indulgence.

BOOKINGS

Reservations open 20 November for December via OpenTable.
Children aged 11 and above are welcome, provided they enjoy the full menu.
We cater to pescatarians but cannot accommodate vegetarian or vegan diets.
Corkage: £70 per bottle (maximum one bottle per guest).
